A new coffee cake

Recently I saw an interesting recipe on one of my very favorite food blogs, The Iowa Housewife. This blog is written by two sisters who enjoy cooking. Their archives are chock full of lovely pictures, great recipes, and helpful cooking tips. Anyway, the recipe that interested me was for an overnight coffee cake. This appealed to me on a number of levels:

It would be very convenient when we have overnight guests.
It would be very convenient when we need to take something for an early morning breakfast or brunch.
It would be very convenient because I am not at my best early in the morning. My mind tends to function more clearly after about 10 A.M.

I've mentioned before that Rob bakes something for our breakfast nearly every Sunday morning. He tried this coffee cake a few weeks ago and we both agreed that it was very tasty and had a nice texture. It has been added to the file and will be pulled out on future occasions when we need an early morning treat.

Here is a link to the recipe. They have very conveniently given you ingredients for both an 8" pan and a 9" x 13" pan so you can tailor it to the size of your group.

This recipe made me wonder if other coffee cakes leavened with baking powder and baking soda could be prepared the night before baking. Have any of you heard of this or tried it before?

Cherry Coffee Cake

I recently made this cake for a church function and realized I had never posted the recipe here on the blog. I got this recipe many years ago from a woman who is a missionary in France. It takes basic ingredients which nearly everyone keeps in their kitchen, it's easy to make, it serves a crowd, and it is delicious. You can also make it with blueberry or peach pie filling. I know some of my readers routinely have large groups of people in their homes so this recipe is a good one to have on hand.

Cherry Coffee Cake

2 sticks butter
1 3/4 cups sugar
1 tsp. almond extract
4 eggs
3 cups flour
1 1/2 tsps. baking powder
1 can cherry pie filling

Grease and flour a jelly roll pan and set aside. Cream butter and sugar then add eggs and almond extract. Next add baking powder and flour and mix to form a smooth batter. Spread 2/3 of the batter into the prepared pan and then drop spoonfuls of the pie filling on top. Drop the remaining batter by spoonfuls on top of the fruit. Bake at 350 degrees for 30-35 minutes or until it tests done and is lightly browned. Drizzle with a glaze made from 1 cup sifted powdered sugar mixed with a bit of cream or milk to make a drizzling consistency. This is easily cut into 20 pieces.

An eventful weekend

Last weekend our son Mark graduated from Furman University with his master's degree in education. There were only five students receiving master's degrees and 600 some getting undergraduate degrees. He was also inducted into the Kappa Delta Pi honors society. Since the graduation was in the evening we decided to have a small family celebration at a local Mexican restaurant that Mark chose. Here are a few pictures from the event:

It rained nearly all day on Saturday so the graduation was held indoors rather than in the outdoor stadium as it had been planned.The ceremony was very nice albeit long and we are very proud of all of Mark's hard work. This is a very eventful summer for Mark and Katie with his graduation, a new baby daughter coming in July, and a possible new position in the fall.

Another event which is very minor in comparison is that Rob tried a new coffee cake recipe this past Sunday. Last week Stacy, from the blog Stacy Makes Cents had a post entitiled Ten Recipes You Must Try--take 2. The recipe Rob tried was for this Chocolate Chip Coffee Cake. For several years now I have been searching for a chocolate coffee cake recipe and this one is definitely a keeper! It is delicious. Several of the other recipes look like they are worth trying as well.
