When life gives you tomatoes, corn, and zucchini…


You could make this easy recipe:

Zucchini, Tomato, and Corn Salad

1 medium zucchini (cut into small cubes or julienned--I used my julienne peeler)
1 cup cooked corn (simmer 3 mins, cool and drain or use canned or leftover)
1 medium tomato, diced
1/2 tsp. Italian seasoning
dash pepper
1/2 tsp sugar
Italian salad dressing or vinegarette--just enough to moisten vegetables

Combine prepared zucchini, corn, tomatoes, seasonings, and Italian dressing. Serves 2-3.

I tried another new salad this week that uses corn, tomatoes, and green peppers.

It was this delicious Cornbread Salad from the Southern Plate website. I cut down the recipe a bit since it was just two of us and for the dressing I used mayonnaise, a small amount of dry Ranch Dressing mix, and some buttermilk. I also scaled back on the bacon. We ate it with this Balsamic Glazed Chicken that Rob grilled. We thought both recipes were very good and worth repeating. 🙂

    My favorite zucchini, tomato, and corn recipe is YOUR zucchini corn chowder! Which I made again this past week for my cousin who was visiting from Illinois. With such an abundance of fresh tomatoes, I just chopped up a couple of them in the soup and didn’t put in canned. And I will have the leftovers for supper tonight! It was delicious as usual.

    I didn’t realize I had just recently commented about that chowder. You’re going to start thinking it’s the only thing I can cook! 🙂

    BTW, here’s an idea for your grilling – A great marinade is Italian dressing and Catalina dressing mixed. A local restaurant uses that as its signature glaze/marinade – and one of their servers let me in on the secret.

    I don’t have a recipe that uses all three of those garden goodies. However, your BLT sandwich reminded me of a treat I made this weekend. It was inspired by a sandwich my husband had at a cute little sandwich shop on vacation. We did our own version, and ours was even better. It’s basically a BLT with pimento cheese spread between the lettuce and the bacon. I made my own pimento cheese, rather than that goopy stuff you can get at the deli, and the combination of tastes is simply scrumptious. Give it a try!

    Mary, that Zucchini Rice Gratin does look good. I’ve bookmarked it and hope to try it when I get some more zucchini. Right now I have plenty of tomatoes.
